The 20th of March begins the official season of spring. The birds are back to singing, the flowers are starting to bloom, and everyone is glad to see the back end of winter for another year. It marks a new beginning, and it’s one worth celebrating. With so many different foods coming into the season, it’s never been easier to plan a spring menu. The most difficult thing is narrowing it down to just a few items, which we’re more than happy to help you with.
Bourbon-Glazed Salmon
If you’re looking for something with a bit of heat, then this bourbon-glazed salmon recipe is perfect for your spring event. You can skewer your salmon to make it easy for guests to grab and go. Cut your salmon into even cubes and coat with oil before seasoning with salt and pepper or your favorite seasoning. It should be skin-side down and grill for five minutes. Flip your salmon cubes and grill them for another three minutes before you drizzle with your glaze and grill a further two minutes. Skewer your salmon cubes and serve!
Grilled salmon and vegetables
The glaze is simple. Put a bit of oil in a pot, and heat it before sauteing onion and garlic over medium heat until tender. Add beef broth, soy sauce, bourbon, brown sugar, red wine vinegar, and tabasco sauce to the pot and let it reduce until it’s thickened.
Buffalo Chicken Salad
Salad is easy and it can be quickly. You can use boneless skinless breasts to make traditional buffalo chicken. You want it to cool because it will serve as the topping to your delicious salad. For the salad itself – mix spinach, romaine, sliced celery, grated carrots, thinly sliced red onion, cherry tomato halves, and crumbled blue cheese. You can lay the chicken across your fully assembled salad and drizzle with the dressing of your choice. You can offer a variety of dressings or make your own.
Lime & Coconut Tartlets
Let everyone know winter is truly gone with this zingy, but sweet, tart. The combination of tropical flavors with the creaminess of the custard makes it a true delight. You can make your own lime custard, whip up some coconut cream, and use pre-made tart bases for an easy treat.
Grapefruit Mojitos
DRJ Catering can’t provide you with alcohol for your event, but we can provide you with a bartender if you would like to serve drinks. Why not imbibe with grapefruit mojitos? Muddle lime juice, simple syrup, and mint leaves in a cocktail before adding white rum and grapefruit juice. Fill the shaker with ice and give it a liberal shake before pouring it into an ice-filled glass. You can top it with club soda and garnish it with a wedge of grapefruit and mint leaves.
